Acknowlegements

Anyone who thinks that writing and testing three cookbooks in three months is a "piece of cake"--no matter how easy to prepare the recipes are--needs to think again! It took a lot of teamwork to get this project completed on time. For being members of the Healthy Exchanges Team, I want to thank:

John Duff and Barbara O'Shea from Putman and Amy Rosen and Paula Piercy from QVC, for cooking up the idea in the first place.

Angela Miller and Coleen O'Shea for assuring me I could do it.

Shirley Morrow for typing, retyping, and typing again as I changed my mind on what I wanted to include.

Rita Ahlers and Gerry Stamp, for helping me test the recipes.

Janis Jackson and Susan Williams, for doing all those dishes, and I do mean dishes, when well over three hundred recipes had to be tested.

Lori Hansen, for lending a hand with the Food Processor II software so the recipes could be accurate as possible in calories and grams.

Rose Hoenig, R.D., L.D. for calculating the Diabetic Exchanges.

Barbara Alpert, for helping me get my manuscript "ready for the presses" more quickly than I could have alone.

Cliff Lund, my "Official Taste Tester." His taste buds are the "Barometer of America." If he loves it, you can bet your family, your friends, and your neighbors will love it too! And he really loves the recipes in this collection of cookbooks.

The entire Healthy Exchanges crew for giving Cliff a hand with the taste-testing responsibilities.

God, for giving me the ability to create "common folk" healthy recipes. It truly is miraculous what happens when we change our prayers from what we want to what we need.
